Suya Spice Mix

Taking us to the streets of Accra, Ghana – Suya is a popular West-African dish typically a meat or fish skewer grilled over charcoal and marinated in a spice blend known as ‘Yaji’ – get yourself a Suya and you’ll soon be booking a flight to Ghana for the real thing!

From our winter menus: Lake District beef suya kebabs with artichoke crisps and artichoke and chilli emulsion.

OUR SUYA SPICE MIX RECIPE (makes 500g) 

Ingredients:  
Ginger powder: 106g
Chilli powder: 62g
Paprika powder: 58g
Onion powder: 53g
Garlic powder: 75g
Sea salt: 40g
Ground nutmeg: 5g
Pine nuts: 100g


How to use our suya spice mix: 

As a rub for beef, chicken, lamb, goat or fish

  1. Pat meat dry

  2. Rub meat with a little vegetable oil 

  3. Rub soya mix into meat (1-2 tablespoons per 500g of meat) 

  4. Thread onto skewers if making kebabs

  5. Grill, roast, or air-fry until cooked through

  6. Sprinkle over more Suya mix to taste 


As a seasoning
Sprinkle over chips, roasted nuts , roast potatoes, or vegetables or mix into sauces, marinades, dips, or butter
